Simple Burritos


So I wanted something quick and easy to eat this weekend and I came up with Burritos. In the area I live there is a large influence of TexMex/Mexican/Latino cooking, which makes me very happy. So much good food around here that I have to try my hand at it quite often.

Ingredients:
1 lb Ground Beef
1 can Black Beans
1 Green Bell Pepper
1 Jalapeno Pepper
Lime Juice
Tortillas
Garlic Salt
Shredded Cheese

I began by gathering my ingredients. This is a pretty cheap dinner to make, so keep that in mind for during the week when you want something tasty, cheap, and quick.


I then diced up the Peppers.


Now I opened the can of black beans and put them in sauce pot and turned the heat to MEDIUM so they are nice and hot.

Time to cook up the Ground Beef. Very simple process, make sure to dice it up finely while cooking if you can. I added Garlic Salt to the meat, along with a healthy dash of Lime Juice. Makes the meat tasty and unique!


Alright, now get your Tortillas. I put some Gruyere cheese down first. I know an odd cheese choice for this, however I like the twist on flavor that it does in a Mexican themed dish.


Now I have everything ready to go.


I put it together quite simply, all lined up next to each other. Topped off with a Monterey Colby Jack Cheese mix. The second one I made was not so pretty looking, and did not last long enough to take a picture. Enjoy.

Dehydrated Apples

I know a lot of people buy these as snacks since they are healthy and tasty. I also know that you can make them yourself. Luckily for me, I already had a food dehydrator so that makes this really easy.

Ingredients:
6 Apples

I know, I know. That's a lot of ingredients. I used 3 different kinds to vary the flavor up.


I began by cutting them up and peeling them.


I then placed them on the racks in the food dehydrator.


Now, once you fill it up with your slices of appels, you turn it on.


Pretty difficult, eh? About two hours later or so they should start to be ready. It really depends on how thin you slice them and preference on their consistency. I took one rack worth of them off since they were done while the other two were not, so they stayed on for another hour. Enjoy!


I just took them off and put them in a ziploc bag that I put in the fridge.

Simple Steak Snack

When I was out food shopping yesterday, I picked up a Flank Steak. I did not know of this cut of meat until I moved to Texas. It is quite the tasty morsel.









Ingredients
1 lb Flank Steak
Butter
Port
Teriyaki Sauce
Lime Juice
Ground Black Pepper
Lawry's Seasoning
Garlic Powder
Onion Powder
Celery Salt

Alright, so I began by taking the steak out and putting it on a cutting board. I know some might not know what this cut of beef looks like, so here you go:

I began by cutting the steak into several smaller pieces to fit in my large saucepan better.


I then put the heat to medium and put some Butter in there. I think it's between 1/3 and 1/2 of a stick.


I seasoned the steak with a nice mix. I covered them first in Lawry's, then a light dusting of everything else.


Now, since the Butter is mostly melted I put the steak in seasoned side down. I then used some Lawry's on the top of them.


I flipped them over about 30 seconds later.


Now I let them cook for about 2 minutes and that's when I added a healthy splash of Port.


About a minute later I added a criss cross pattern of Teriyaki Sauce and a splash of Lime Juice.


I then flipped the steaks.


I took one off to check how they were cooking, it looked like this:


Now I know a lot of people who like it at this point of cooking, however I like my Flank Steak medium to well done. So they went for another minute.

Finally once they were cooked enough, I took them off and plated them. Of course, a beer was necessary while eating this delicious lunchtime snack. Enjoy.
