Spicy Pulled Pork

The other day I sort of decided that I want to make some Pulled Pork again. It's been quite awhile and needed to be revisited. So I went grocery shopping and noticed that it was on sale by the pound. Naturally I picked some up.

DISCLAIMER: THE AMOUNT OF SPICES USED HERE MAKES THIS RIDICULOUSLY HOT AND SPICY! NOT FOR THE FAINT OF HEART OR STOMACH!!!

Ingredients:
2.5 lbs Pork Loin
1 bottle Sierra Nevada Northern Hemisphere Harvest (BEER)
Paprika
Ground Cloves
Ground Black Pepper
Garlic Salt
Lawry's Seasoned Salt
Ground Allspice
Chili Powder
Ground Turmeric Root
Fennel Powder
Chipotle Chili Powder
Ancho Chili Powder
Cayenne Chili Powder

I began this by gathering all my spices.


Then I found this delicious bottle of seasonal brew. Yes, I had a second bottle to enjoy while the pork cooked.


In the slow cooker, I made a spice mix. I began with about 2 spoonfuls of the following: Lawry's Seasoned Salt, Garlic Salt, Ground Black Pepper, Ground Turmeric Root, Fennel Powder, Paprika, Ground Cloves, and Ground Allspice. On top of those, I added about 2.5 spoonfuls of the Chipotle Chili Powder, Ancho Chili Powder, and Cayenne Chili Powder. Then I mixed them together.


On top of that, I put in the two Pork Loins. I placed them how they are so as to make a hole in the middle for the spices and beer to meld together easier.


Once the Pork Loins were in, I added a smaller amount of that spice mix to the tops of them. Turn the heat on 'high' now.


Then I added a little big of Beer in the middle hole. It bubbles up from the reactions it has with the spices in there.


Now the rest of the bottle. You will need all of it. If you are using regular bottle sized beer, use at least two bottles.


Now put the lid on and let cook. Take a peak about 2 hours into the cooking process.


That looked tasty, didn't it? I think it did. Well, this recipe takes about 5 hours. I say about since it's a rough estimate depending on the slow cooker, type of beer used, and if you switch it from HIGH to LOW or vice versa.

Check it again a few hours later. Your entire home should smell like the Pork.


Such a change from that darker muddy brown color before to a bright reddish hue! Step back when opening the slow cooker. That spice aroma will kill you!

Alright, to taste it I took a tip off of one of them and it was delicious. So I unplugged the slow cooker and took out the Pork Loins. This is what they looked like right away:


I cut one apart, this is what it looks like. Shows that I could have taken off a little bit sooner, however still moist and deliciously spicy.


I know there are more than a few different ways to actually eat the Pulled Pork I have created, however I prefer to eat it 'straight'. As in I like to just put it on a plate and eat it. Some Asiago Cheese never hurt it either. Enjoy.

Portobello Mushrooms with an Onion Brandy Sauce

I picked up some Portobello Mushrooms since they were on sale this past week and today they needed to be cooked. I decided to use some Boiler Onions and Basil as well. Enjoy this recipe, I know I enjoyed the cooking of it!












Ingredients:
Mushrooms:
4 Portobello Mushrooms
1/2 cup Port
Soy Sauce
Apple Cider Vinegar
Ground Black Pepper
Italian Herb Mix

Sauce:
5 Boiler Onions
1/2 cup Basil Leaves
1 shot Sherry
3 shot Brandy
Lime Juice
Soy Sauce
Apple Cider Vinegar
Ground Black Pepper
Sweet Paprika
Fennel Powder
Ground Allspice
Ground Cloves

I began by gathering my materials.


Then I got a small sauce pot put on the stove and shredded the Basil Leaves into it.


Second, I sliced the Boiler Onions after peeling them. Into the same pot they went.


I then poured in some Brandy. Just to be clear, I meant the liquor not the R&B singer.


Then I poured in some Sherry. Turn the heat to medium or so.


Now I added in about 2 spoonfuls of Lime Juice and a good 1/4 cup of Apple Cider Vinegar. I also added in all the spices. I was going for a more even amount of everything, but by accident I put in a little more Ground Cloves and Allspice. Turns out it worked pretty well.


Now let it cook at just below medium for awhile, stirring occasionally.

Turn your attention to your Portobello Mushrooms. In a large saucepan I poured in about a 1/2 cup of Port and the same for Apple Cider Vinegar. To this I added a splash of Soy Sauce. In went the Mushrooms, gill side down, once it started to boil.


On top of the Mushrooms I sprinkled Ground Black Pepper and a dash of Italian Herb Mix.


Oooo! Look at that sauce cook! Stir it some more!


Flip your Mushrooms over about 3 minutes after you start them cooking.


They should cook for a few more minutes, or until they are spongey which means they are done. Turn to your sauce now and turn it off. Put the sauce mix into a food processor and take a bad photo like me.


Puree it until somewhat smooth. Now cut your Portobello Mushrooms into strips and plate. Add the sauce however you want it. I added a pinch of Italian Herb Mix to it. Enjoy.

Chef's First: Clams

This morning I took a trip to Central Market, a very amazing grocery type store close by. Here I decided to grab a lot of things I am not that used to cooking, which ended up being lots of things I've used before and clams. How does one cook clams I wondered, so I bought a 1/2 pound to see how it goes.



Ingredients:
1/2 lb small Clams
1/2 stick Butter
1/2 cup White Wine
1/2 cup Olive Oil
6 diced Garlic Cloves
1 diced White Sweet Onion
Italian Herb Mix
Sea Salt
Linguine Pasta
Parsley

This recipe is fairly simple and yields great results. I started by cleaning the Clams themselves with a brush to get rid of as much grit on them as possible. This takes a few brushings and is simple to do.

Once that was done, I decided to serve these Clams up on some Linguine Pasta. I leave the amount up to you as I have no idea exactly how much I used. So a pot on the side with water, some Sea Salt, and a bunch of Italian Herb Mix that the pasta went into once the water was boiling.


Now that that is going, to the clams! You have to dice up the Onion and Garlic beforehand. In a saucepan, put half of the butter you are going to use and all the olive oil in with the heat set to medium. Stir in about 1/2 of the diced onions and garlic. Wait until the onions start to go translucent to throw in the rest of the onions and garlic. At this point add in a light amount of Italian Herb Mix and a pinch or two of the Sea Salt. Put the clams in. I made sure none were touching each other. I also added in a little bit of fresh parsley.


Every once in awhile stir them around to make sure they continue to be coated with the olive oil mixture. Your pasta should be done around now, so strain that and put back into pot with cover to keep warm.


Once your clams begin to open up, that is the signal that they are done. So I dished the pasta out and arranged the clams on that, along with a garnish of parsley. Enjoy.

Funghi con Pomodoro

The title translates to Sauteed Mushrooms with Garlic and Tomatoes and is a great recipe to throw together somewhat quickly. I brought a cookbook to work today to look up some new recipes to roughly try. The cookbook was: My Calabria by Rosetta Costantino w/ Janet Fletcher. This book is very good in my opinion as it relates a personal story to each recipe that generally makes me smile and want to grow more locally.

Ingredients
1 lb White Button Mushrooms (sliced)
1.5 cups worth of diced Tomatoes
5 tablespoons of Extra Virgin Olive Oil (EVOO)
4 Garlic cloves (diced)
1 tablespoon Sea Salt
1 tablespoon Cracked Red Pepper Flakes
2 pinches Fresh Thyme
2 pinches Fresh Oregano
2 tablespoons of Italian Herb Mix
1/4 cup Cabernet Sauvignon Wine

You begin by gathering all of your ingredients at least somewhat ready. I did not cut my grape Tomatoes in half beforehand like I found out I should have. It hurried me up a lot during the actual cooking process, so lesson learned I suppose.


You start by placing a saucepan on the stovetop, turn the heat to medium. Pour in your Extra Virgin Olive Oil and diced up Garlic cloves. Stir them around a little bit in the EVOO to coat them in the oil.


Once they begin to turn color and the oil smokes a bit, pour in your mixing bowl of sliced up Mushrooms. Mix them around a bunch; I used a pair of tongs for this part, a wooden spoon for the rest.


Add in your Thyme, Oregano, Italian Herb Mix, and Cracked Red Pepper Flakes. Mix together to spread them around. Pour in your Cabernet Sauvignon and stir once again! (It is ok to pour yourself a glass now if you have not done so by now!)

During this time, I sliced my small Tomatoes in half, which could have been done beforehand but oh well. I put them in a mixing bowl. Here's a picture of them, they look awesome.


Then after a few minutes, when the Mushrooms turn color I poured in the Tomatoes. I added a half pinch or so of the Italian Herb mix and then the Sea Salt. Then stir them up a bunch so you get the Salt all over.


After a few more minutes, let's say 5 minutes, it should be close to being done. I turned off the stovetop at this point and let the heat cook them a little bit more while I got the plating ready.


I chose to use some of our ever present salad mix in the fridge as a base. To this I used a slotted spoon to scoop out the Mushroom/Tomato mix and place it on top. Garnished with a light coating of Parmesan/Romano grated cheese. Enjoy.

Chef's Choice Chili

So as many of my friends around here know, I absolutely LOVE to make chili. I love it. I make it a lot during the colder months, however after making the Tomato Sauce yesterday, I decided that I have gone too long without chili.



Homemade Tomato Sauce:
-Get your soup pot or large saucepan depending on how much you are making. Mine filled a large saucepan since I did not make my normal amount(about 1/2 of normal).
-Mix all your spices together in a bowl to your liking, or straight in the pot like The Chef does. I went heavy on the basic ingredients as well as the Tumeric and Cajun Perfect Pinch. The rest I went light on since they are just there to smooth out all the flavors.

-Now that your spice mix is making your kitchen smell amazing, onto the food processing happy times! Basically I like my chili smooth with not a LOT of huge chunks in it. The order I processed was Roma's, Greenhouse Tomatoes, Onion, Carrots, Poblano Peppers, Jalapeno Peppers. Add to pot as you go, turn the heat on med-high when you add the Roma's and stir them in with the spices. A little olive oil will smooth it out if necessary.

-Grab your grouping of green onions and dice them up almost to the white part. You can put the green onion's roots into water and they will grow back! Add to pot.

-Stir everything together evenly and turn to medium heat. Once it starts boiling, change the temperature to low or simmer.

-Let simmer for about an hour, then it should be tasty enough to eat!

Homemade Tomato Sauce:
6 Roma Tomatoes
2 Greenhouse Tomatoes
1 White Onion (Large)
2 Jalapeno Peppers
2 Poblano Peppers
4 Carrots
1 cup diced Green Onions

Spices for Tomato Sauce:
Cayenne Pepper*
Chili Powder*
Garlic Salt*
Ground Cumin*
Ground Allspice
Ground Cloves
Paprika*
Celery Salt
Ground Black Pepper*
Ancho Chili Powder*
Ground Tumeric Powder
Curry Powder
Mesquite Seasoning*
Perfect Pinch Seasoning - Cajun

*are the basics, the rest are choice ingredients.

For Chef's Choice Chili:
-First get a pot the size you think you need for the chili, or maybe a little bigger.

-Get your pound of ground beef and brown it in the pan with Lowry's Seasoning, maybe some butter too if you love calories as much as I do!

-Once the beef is all browned and tasty smelling (yes take a sample to make sure, you know you want to!), you get your tomato sauce and add it directly into the pot. Stir.

-Use food processor for white onion, then add it in. Stir. Let it cook on low to medium-low for about 30 minutes.

-That time frame is just a rough estimate of time needed, so whenever your frequent tastings of it say it is done just dish it out.
